Reheating instructions
Your meats arrive fully cooked and vacuum sealed. Whichever method you use, heat the meat to 165°F in the thickest part and check with a food thermometer. Reheat only what you plan to eat.
Best: hot water bath, still sealed
1 Keep the meat sealed in its bag. Do not poke or cut the bag.
2 Bring a large pot of water to a boil, then turn the heat down so it stays just under a simmer. Keep the
bag off the bottom of the pot and fully under water.
3 Heat until hot all the way through. Plan on about 20 to 30 minutes for a 1 lb bag, and longer for 3 lb and 5 lb bags.
4 Carefully cut the bag open (steam will escape), check for 165°F, then slice and serve.
Oven
1 Heat the oven to 275°F.
2 Take the meat out of the bag and place it in an oven-safe dish with a splash of broth or water.
3 Cover tightly with foil and heat until the center reaches 165°F. Start checking at about 30 minutes,
and allow longer times for larger amounts.
Microwave (least recommended)
The microwave heats unevenly and can dry out lean meat, so use it only when you are short on time.
1 Never microwave a sealed bag. Take the meat out and put it in a microwave-safe dish with a splash
of broth or water.
2 Cover loosely, leaving a vent for steam.
3 Heat on medium power in 1 to 2 minute bursts, stirring or rotating between each one.
4 Let it stand a minute, then check for 165°F in several spots.
